Q: What is the benefit of working with a celiac travel consultant?

A: Simply put, it makes your life much easier. Ever found yourself spending hours in front of the computer sifting through blog posts and Facebook groups to find safe restaurants? It’s time-consuming and it can be difficult to weed out misinformation. Well, I’ve done all that heavy lifting for you! So you get to relax and travel safely without all the headache. You get my undivided attention for half an hour or a full hour (depending on which you book) to answer all your questions. It’s 100% personalized so you head off on your adventure without any worries or doubts.

Q: Why are you the best person to help me plan my trip?

A: Thanks for asking! Let me give you a little more info about me…

-My degree is in medical anthropology, specifically the impact of culture on celiacs.

-I live in Italy (have for years!) and I know the celiac scene inside and out.

-I speak English as my first language (no need to worry about a language barrier) and fluent Italian (happy to help you navigate confusing menus).

-I have personal relationships with the chefs of many of the GF restaurants throughout the country. Want a reservation? No problem, I'll send a text!

-I’ve been diagnosed celiac for 6 years + other food intolerances and chronic illnesses…and I’ve been a full-time digital nomad for much of that time. I’ve developed very strong celiac travel skills that I’m excited to share them with you!

Online pasta classes

Q: I am a horrible chef. Is this class going to be difficult for me?

A: Don’t worry! You’ll be pleasantly surprised by how easy this recipe is to follow. Plus, I’ll be there to help you the whole time and answer any questions. I’ve had 10-year-olds in my pasta classes!

Q: Does the class require a lot of supplies, equipment, or ingredients?

A: Nope! I’ve intentionally kept the recipe as simple as possible because I live in a small, city-center apartment. No mixer or pasta machine needed…we do everything by hand. I’ve even used a wine bottle when I didn’t have a rolling pin!

Q: What kind of flour should I use?

A: Great question:) After booking, I will send you a message with more details about the best GF flour blends in the states!

Q: Do you send the recipe afterward so I make pasta again?

A: Yes! The PDF is yours after the class so you can make as much pasta as your heart desires.

Q: Do you teach in person?

A: I have limited availability for in-person GF pasta classes in Florence and I reserve in-person classes for clients who have done a travel consult with me.

Q: What is included in the travel guide?

A: Your travel guide includes a full list of the top celiac-safe restaurants in that location including short descriptions, links to their menus, and pins on an interactive map. It’s the perfect travel companion for a celiac-safe adventure!

Q: Why should I use a Thatch travel guide instead of just doing my own research?

A: Fair question! I’m sure you’ve seen tons of posts in different celiac travel Facebook forums with lists of restaurants people visited in Italy. And while that is a good starting point, a Facebook post is not an all-inclusive resource. And it definitely doesn’t include an interactive map. I absolutely want you to feel empowered to do your own research, but I also want to assure you that my guides are researched inside and out to make your celiac travel experience as seamless as possible. Plus, you’re getting the information from a local as opposed to someone who went on a quick vacation.

Q: How do you vet the locations you add to the guides?

I’ve personally eaten at the large majority of the places on my guides. If I haven’t personally visited the restaurant, I do a LOT of research. I look through their websites, analyze their menus, sift through reviews, and I reach out to the restaurants directly (in Italian) to clarify their celiac protocols. If there is any doubt in my mind, they don’t make it on the list. Every restaurant on my guides is labeled as either 100% GF or as having GF options so you can choose your comfort level.
